Executive Chef
Laurel mostly grew up on the Island, in Avalon, but now lives in San Pedro with her husband. She cooked her entire life but she first became a lawyer. 5 years into her law practice, Laurel realized that food and cooking was her real passion. She started a food and wine blog which turned into catered dinner parties. She realized she loved cooking and was very good at it, so she went to culinary school to follow that passion.
 
How would you describe your style of cooking?
Comfort food. I love the perfect sandwich with a twist. 
 
What is one of your favorite ingredients to use in your dishes and why?
Fresh ingredients. I take classic dishes and add a twist to make them different.
 
What is your favorite tool to work with in the kitchen besides a knife?
Food processor to create different sauces. 
 
What do you love most about your job?
Everybody loves to eat, and everyone loves good food. I love being a part of that experience.

Chef de Cusine

Vince grew up locally in San Pedro, California. He has always enjoyed cooking. When he found out someone would hire him to do something he loves, it tuned into a win-win situation for both.

How would you describe your style of cooking?
I normally drift towards the homestyle gourmet style of cooking, as I like to create food that guests can appreciate.

What is one of your favorite ingredients to use in your dishes and why?
It is true that everyone loves bacon, which is why many of the dishes on the menu have it included. In my personal opinion, bacon just makes everything taste better.

What is your favorite tool to work with in the Kitchen?
Your knife is the most important tool for a chef and makes a significant difference in the cooking. A good knife is the only tool a chef should really need.

What do you love most about your job?
I am very lucky to have a great team in my kitchen. When we have a large wave of passengers coming in before a sold-out boat, there is no one else I would want helping me complete all the orders.
